New Year, New Website, and a Brand New Blog!

Greetings from Hornitos Beef! It has been a while since we have reached out to our wonderful customers. We got a new website, and this time we added a blog feature. The blog will feature our latest stories and recipes. In our latest article, we shared Grams’ Red Wine Beef Stew, an easy yet filling slow cooker recipe that can serve a hungry crew!

A Season of Growth, Pruning, & More to Come

We are fast approaching the end of our 2025 year. It has been a year full of growth and pruning, as I like to call it.

The year 2025 brought change that we were not anticipating. However, often when pruning is endured, growth is soon to follow. Hornitos Beef closed the storefront in March of 2025. We continued to do business as usual, harvesting whole, half, and quarter options. A big thank you to all our wonderful customers.

Pruning came again when we were faced with the reality of what cancer and age bring in our loved ones’ lives. Closing the store allowed me to spend much needed time with women I can only hope to be compared to one day, Gayle Fannin and Laura Eileen Rojas.

In January 2025, my beautiful Grams, Gayle Fannin, went to be with the Lord. She was a wonderful example of how to live, love, and give in this world.

Gayle Fannin “Grams”

Just a few short months later, we said yet another farewell to my beautiful Aunt Lola, Laura Eileen Rojas, a woman who endured, loved, and tried her very best to make sure anyone who crossed her path went away happier than when they came.

With our goodbyes behind us, we are now faced with staying behind to keep living and breathing the gift of life we are blessed to have.

The time has come to let God continue to mold our future. I do realize most people do not have the opportunity to hit the pause button on their business and careers when faced with the realities of life. We count ourselves blessed that God gifted us this business and customers just like you. Thank you is an understatement when showing our gratitude for each customer we have. Selling out of our inventory for 2025 brought me a few months to work on tending to the growth God has in store for us.

Growth is here. We are excited to see what the 2026 year will bring. We hope you all enjoy our newly updated and refreshed website. We are starting off with monthly newsletters and a blog where you can find recipes and updates on what we are doing on the ranch, as well as all those fun activities that the Wild Bunch keeps occupied with, from junior rodeos, jackpots, sports, 4H, and church activities. We will try to keep you updated with photos and videos.

Here on the Ranch

Here on the ranch, we have horses, dogs, cats, chickens, goats, and who knows what else has snuck in for a free meal. We will introduce a new critter each month.

This month, meet Tally. She is my silent support animal, full of character. It is said animals tend to take on characteristics of their owners. Well, I would say that might be somewhat accurate. Tally is four years old. She is a Heeler and Border Collie mix. She loves to follow me around early mornings while doing chores, enjoys buggy rides, pushing cattle in the roping alley, and is always happy to chase turkeys or a cat off the porch away from her scrap bowl.

Finally, we would like to wish each and every one of you a very Merry Christmas. Jesus is our reason to celebrate each season.

Best wishes and blessings to you all,

Tom, Meg, Letty, Della, Everett, Louie, and Sam
